Mixologist: Get in touch with your feminine side at Eve Lounge

Eve Lounge: This is the kind of bar a gal could really get used to. Oozing sophisticated femininity that manages to never go overboard, this fun addition to South of Market’s liquid landscape is just lovely. That’s where we high-fived Misty Spinney, a gorgeous little bartender who made us the My Misty, one of the best cocktails we’ve had in quite a long time. This fabulous concoction of strawberries, jalapeño, lime and citrus-flavored vodka had us just tickled pink (and incidentally, the same color as the drink). Boys are welcome, too, with plenty of manly drinks bound to add to the hair on their chests. But we say get in touch with your feminine side and order one of the girly beverages. 575 Howard St., San Francisco, (415) 543-5874, www.eveloungesf.com

How’d you get into bartending? It’s a really funny story. I signed up for the bartending school even though I had been bartending illegally, and three days into it, I was like, “This is the biggest joke I’ve ever seen in my life. I want my money back.” And the guy said, “I know. I’m really sorry. You’re totally qualified. In fact, I work at this place, why don’t you come and interview?” And I had no idea what I was doing. They would order a blue something and I’d think, “OK, what’s blue?” And I was literally just pouring anything.

So you wound up scamming the scam artist. I did! Believe it or not! Because I knew how to make a Cosmo and a martini, but I went into a full-fledged nightclub and I was like, “What the hell are all these drinks I never had heard of?” I knew the key was to move — fast — so I just moved as fast as I could. And people would make faces at the drinks ... but they loved it, it was strong. I pretty much faked it ... but then I had to learn all the drinks.

Is the drink you made for us named after you? Yeah, it is. The name was funny because the owners wanted something sexy, and I just couldn’t take myself seriously enough to put “Sexy Misty.”

So who is Eve? It’s just a very feminine, sexy name that just embodies what our entire concept and idea is here.

What’s the best cocktail you’ve had in a while? It was in New York and it was limoncello, mint, with prosecco. It was just very fresh ... tart, girly, citrusy cocktail.

If you could serve a drink to anyone who would it be? Marilyn Monroe. She’s just like one of those classic women and I’d be curious to see her reaction.

What would you serve her? I would serve her my cocktail and wait for her reaction to see if she liked it or not.

What’s the best tip you’ve gotten as a bartender? Your attitude. You cannot know what you’re doing, and if you’re laughing and having a good time, people will, too. Basically, you’re putting on a show. I’m high-fiving customers having a great time.
